Bacterial biopolymer with varied use as a thickener, stabilizer, structuring and microencapsulant in the pharmaceutical and food industries.

Xanthan Pruni is a biopolymer produced by bacterium. The production process received a patent in 2017, resulting from more than 25 years of studies by researcher Dr Claire Tondo Vendruscolo. In tests carried out by Biopolix – in partnership with the Federal University of Pelotas, SENAI-CETIQT and IPT – the production on an industrial scale of the material was proven.

Viscosity and viscoelasticity are technical properties of Xanthan Pruni, generating a wide range of applications. Some examples are the composition of food, drugs, cosmetics, vaccines, paints, prospecting and oil extraction.

The diversity in the applications of Xanthan Pruni is the result of the flexibility in operational parameters when being produced. Based on this, Xanthan Pruni is used as a thickener, stabilizer, structuring agent, emulsifier, encapsulant, adjuvant, lubricant, among others.

The main differential of Xanthan Pruni in relation to commercial Xanthans is that it has rhamnose in its structure. In addition, other commercial Xanthans used in Brazil are imported. The bacterium that generates Xanthan Pruni directly uses sucrose in its production. For the recovery of the biopolymer, alcohol (ethanol) is used. These inputs are produced in Brazil on a large scale, facilitating the production of Xanthan Pruni.
